actually everyone except maybe the ithorians can wear the full suit including the boots and gloves, and yeah that means wookies can wear full suits.

Nope. Itho's can wear the full set too. My guild's Itho posted some screenshots over at swgcraft.com's forums of him in various stages of armor wear. (Full armor, no gloves/boots, no helmet, etc)
