I used to solo the uber tuskens with Master Swords/Master Doc all the time. First, try to pull them outside and get them seperated, then charge one of them while spamming Intimidate. This seems to get them to go melee, even when you're still out of range for the Intimidate to stick. As long as you can keep them fighting melee, they're easy. The only real risk is either that while charging, or at a time when you're knocked down, the tusken pulls out his rifle and uses a special that one-shots you.
