Actually, on signs for houses, I do
"\#000000\TEXTHERE"
The first "\" determines that you want to start a color hex. The "#" tells the system that you are starting the hex. Finally the last "\" Tells the system that is ending, making no confusion with letters in the text you want to see colors.
EX: My house signused to say"F E D A ' S E S T A T E" But the coding was
"\#FF0000\F E D A ' S\#FFFFFF\ E S T A T E"
this isnt much different than Jimbo7131 stated, but I just added the final backslash, and explained what it did for people who didnt know

I think it accepts HTML so you could do <center>text</center>
color it in the graphical editor, then press "Edit as Html".
If you are lucky, you can copy the html code directly into your sig.
If you are unlucky, the forum will complain about some of the html-stuff in your sig.
You can also format the text and use the webding/wingding fonts for special characters.
