Do you have to have a 2h weapon equiped to get the counterstrike bonuses, or a pole to get the block bonuses???

Exactly.
Block = pikeman/rifleman
Counterattack = swordsman/carbineer
Dodge = fencer/pistoleer

but do you have to have the weapon equipped to get that proffessions bonuses?

Yes. The profession bonuses don't stack. That is, I couldn't dabble in Pistoleer and Fencer to get 160 dodge. I'd get 80 dodge when holding a pistol, and 80 dodge when holding a one handed sword. And no dodge when holding nothing.

You have to have the weapon equiped to get the dodge/block/Counter attack.
Defences vs states, melee and ranged defences will work with any weapon. Melee and ranged are capped at +125 (as are dodge block/counter attack) from skills, and you can get another 25 from AA/CA, and a little bit more from food.

You absolutely can dabble in professions that both have dodge to increase your total amount. But you do have to have a weapon from a profession that uses dodge for that skill to be active. If you have +80 dodge from pistoleer and +80 dodge from fencer, when you are either holding a pistol or a 1-H weapon, you will have +125 dodge (It is capped at +125).
