I was going to start by saying that if you listened to the person giving the quest they said something like "are you sure you want to do this? If you take this quest you won't be able to work for someone else for a while." However, after reading your post I assume English is not your native language and you may not have understood the warning.

If you took the crafting mission that is the only mission that you can complete during this 3-week phase. You cannot take another mission or work for anyone else inthe village. Theywill just tell you that you are already too busy. There is no way to undo this. You will just have to wait two more weeks for the next phase.

Since you did get 5 unlocks, you should only need one more tree. You can go ahead and train novice Combat Prowess and convert enough xp to fill an entire branch. It could take you another two weeks to do that anyway. You don't have to unlock or train skills to convert xp.
