You can convert ANY credit you have, you just can't train certain trees until you unlock that part in a quest. I promise, you won't be dissappointed. If you put any thought into your toon when you created him, you will be very satisfied with taking him into the force. Sure, it will take a long time... but when you arrive, you are there. You will get the satisfaction of having played a wonderful game, with cool loot. You will have decorated a large home with faction stuff and any rare items you might find. You will have decorated a tree, around christmas, with the crystals you find.
When you are a Jedi, you will be humble or be vicious... but you will take care during gameplay, because you will suffer when he dies. Enjoy brother, it is getting better.

If you're interested in the FS crafting trees, STOP.
Look for the threads that describe the XP conversion ratios. Figure out how many combines, and how many resources, are required.
A combat profession can grind out 900K weapons XP (and 90K combat XP, for a total of 30K+30K = 60K FS XP) in a 3-hour buff. At current FSXP conversion ratios for crafting professions, it will take you a day or two of 24/7 grind crafting to accomplish that. So in terms of XP per hour, the crafting trees may take prohibitively long even to those willing to ~mumbleEULAviolate~.
Therefore, if you have only two or three "free" trees of FSXP, and if you are interested in the FS crafting trees, you should strongly consider spending the "free" XP there, and grinding in combat for the other trees in order to minimize the amount of time you spend stuck in the SOE-designed grindfest.
