Level 80 is level 80. It doesn't matter if you got level 80 through elite professions or (somehow even though it's probably not possible) a ton of mastered starter professions.

The symbols serve no purpose except to be there. Group members see them, so the general thought is they're for letting your group members know what role you are playing.

Also it does make a difference with players cuz dmg multipliers r based on level as well

Elites also heal INSANELY fast, if you need to see an example go take a group of 8 to see Necrosis. We had 2 MLS/Mdefender jedi and one Mpowers/Menhancer jedi in the group. The rest were normal ranged prof's and we couldnt take him down fast enough. He regen's some crazy fast hit points even after you take out the power cells

Basically the only difference is their HAM. A Lvl 37 (i think) elite was hitting me for only 30 some odd damage, about normal, but had 17k ham.

The difference is elites get special attacks/abilities, like players, including sometimes healing.

Furia, Kavala, Xana, Tarantella (Xana's alt, before NGE), all cancelled.(3 accts total)

regen and ham sounds bout right, I'm not sure about them having any special attacks since I'm rifleman/smuggler I've yet to feel one of their hits, it took me about 10 minutes I'd say to kill the katarn he was lvl 86 elite I think.
