colored ones are used to give 'elemental' damage in a saber. Each saber uses one colored crystal.
clear crystals and krayt dragon pearls give power and speed to the saber. there can be one to four power crystals/pearls in each saber.
training sabers have only a color crystal...this is the one you make during the padawan trials andis used to grind the first 20k of experience. after that, you make more powerful sabers that hold more power crystals/pearls.
the colored crystals are the most common, and ultimately, least useful to a Jedi. we need one per saber....but that's it.
two colored crystals are 'named' and are rewards for doing specific quests. they provide a little more elemental damage than standard ones. in the future, there will be more 'named' color crystals added to the game.

Your elemental damage would increase by 5% of your max damage. DPS is not a useful stat and is misleading, talk in min/max, speed, FC and SAC, its way more informative.

Yup, but I guess he already has 25% from a regular color crystal
