If I complete six full branches can I at a later date grind a seventh and drop one of the original six ?

yes, once you fully train a 7'th tree, you can drop another. Just bear in mind that once you start going jedi, this gets hard to do since you cannot convert jedi xp to force xp.

It’s not so much that I want to drop any at the moment....

I am deploying for six months in April and want to have my Padawan and play with it before I go, but to do that I will need to grind skills I don't want to keep in the long run.

for what its worth, the only columns worth getting for padawan are melee and ranged defences. The other 4 could be basket weaving because none of the others will help you in combat. Melee speed and accuracy don't affect lightsabers cause they are not classified as melee weapons in the current build, combat upgrade may change all that, but just thought i'd throw that out to you.
