I've never really done the crafting quests so i was wondering if i had a good shot at being able to do it. The character i'm using is master weaponsmith, master armorsmith, artisan 4,0,0,1, scout 0,0,4,0, medic 0,0,0,4, and bio-engineer 0,0,0,4

You should be fine, Pre-Cu I did them all without any combat skills what-so-ever. I really liked the Phase I and Phase IV Crafting quests in fact. Still Phase II and III require 200 pieces of Sith Rescoures each, so if you plan to do all of them, I'd start stocking up now.
