I'm wondering this too, I know that Jedi exp can't be used to covert, but as we still are padawans and have our other skills, can we change then with regular exp?

Yes, but you need to grind a full seventh linebefore dropping the first, so you will need a standard profession.

So does everyone take at least Melee speed, Accuracy, Defence and Ranged defence. Those seem to me like the things that would be the best for a Jedi starting out.
