You can get padawan w/o dropping MBH/MCM, but you will have to drop some to get your first tier one box in anything.
The sooner you start, the better, as you will have to do 2 trees twice.

You need 24 skill points to get the 6 full branches of Force Sensitive skills needed to do the Padawan trials. You can drop some skills and still remain CL80. I was MBH/MCM/0004 Pistoleer. After training my FS skills I will still be a MBH/MCM and still be CL80. This could be different depending on template I suppose.As far as what skills are suggested, I would go with any that help in defense and combat. However, others have gone for different skills because the XP is easier to grind. It is really up to you, go with skills that will help with combat, or go with an easier grind. By easier, I mean the difference between grinding combat xp compared to grinding xp by dancing in a cantina. The choice is yours. There is no right or wrong answer.

Well, the answer to your question depends on your goals. If Padawan, you'll want a set of FS skills that are different from what you'd want to go for if you're just looking to supplement your conventional skill set. Personally, I would forget about using the FS skills to supplement your toon's conventional skills. I think you'd be better off keeping your skill points invested in an extra skill that gives you specific benefits beyond a few relatively minor modifiers. For example, my alt is a Master BH/Master CM/Pistoleer 0-1-0-3. I feel the modifiers plus special attacks (especially Stopping Shot) are worth more than just the "subtle" (read that, "weak") enhancements that come withe the FS professions. FS Ranged Defense was great for my main toon prior to the CU, back when Bounty Hunters had virtually no defense, but after the CU, it wasn't nearly as big a deal for him.
If you do go for Jedi, the skills that will enhance your toon's Jedi career are dependent on whether you intend to go for Powers or Lightsabers as your main profession. Powers Wielders are the "ranged" Jedi; Saber Masters are obviously the "melee" Jedi. So obviously, that gives you some choices to makebetween the Accuracy lines: Ranged or Melee Speed/Accuracy? And so forth.
Probably the weakest of the skills are Persuasion and Vehicle Operations. Supposedly, the Persuasion ability gives you minor boosts in your ability to avoid detection in "Imperial Crackdown" scans by NPCs and such. Vehicle Operations' benefits seem to me to be swallowed up by internet lag. Best thing about it is the nice buffing crystal you get for completing the quest for Whip.
People are debating the effects of Luck -- some say it increases your odds of obtaining phat lewt, getting a good tune when tuning crystals, etc. Others say all it does is increase the size of the cash windfalls obtained from looted NPCs, and does NOT affect the loot-item tables. I don't have it, so I can't say one way or t'other.

You do not have to start you village quests during any particular phase. It is currently phase 3 in most galaxies and if you have already defeated the Sith after your conversation with the "Old Man" then you should have the waypoint to the village. If you have the waypoint to the Village, go there and talk to the Village Elder. He will give you the option of what type of help you are interested in giving to the Village of Aurillia (sp?)and he will send you to another NPC in the village that will give you your actual quest to get your unlock.
If you plan on just taking up the Force Sensitive skills to enhance your current template, I would suggest taking up the Ranged Accuracy/Defense/Speed trees and the Melee Accuracy/Defense/Speed trees to enhance your template. (Although the FS boxes will not enhance your template all that much) If you decide to go jedi I would pick up all of the Melee trees + the Ranged Defense tree and possibly the controversial Luck tree.........and then just another tree that irks you.
I don't know how much help this post has done, but if I have helped at all then my post has done its job. I wish you luck in your grind and I will check back every now and then to see how you are doing.

The village is on a rolling loop, and you can jump in at any point in it's four-phase life cycle.
