It is my understanding that to advance through Jedi you will need to eventually surrender most of your current skills to make room. My impression also is that there are sufficient skill points to completely master about 3 and a half professions total, when all is said and done.
Can anyone tell my exactly how much is "left over" after you dedicate your skills to Jedi Knight training? Do you have enough left over to master at least one other profession? In other words...can you be a Jedi Knight and still be a Master Pilot or Droid Engineer?

First, 24 skill points are taken up with FS skills you cannot give up. Then, you can Master 2 of the Jedi skill trees and learn up to level 4 in two branches of another. You can also dabble a bit, but still be able to use most of your skill points in Jedi skills.
You can become a Knight without using all of your SP, but you do not become eligible for the Knight Trials unless you have spent 230 SP on Jedi skills (including FS skills), so you could be a Knight with 20 SP in non-Jedi skills. Enough for a Novice box, but nothing more.
However, Pilot skills do not take SP, so you can be a Knight and a Master Pilot (and the same for Politician now, I hear).
