Apologies if they've been answered somewhere but I did look and read a lot of forum posts!
1. If you bimble up to the village without reading any of these posts and helpful FAQS, take a quest and then decide that actually you don't want the skill that is at the end of the quest - can you cancel the quest? If not, is it not important or will it have catastrophic results on your template?
2. If you a rifleman, does it make any difference to lightsaber wielding? Do you have to be a melee god to start with?

I am pretty sure you can't take a FS quest from the village until you complete the Glowie Trials (Glowie Guide. So even if you bumble across it you can't accept a mission for FS skills until that phase is complete.
From what I have seen and read, Rifles does not add much to the Jedi Grind/LS. Melee professions seem to be more useful to a staring Jedi then a ranged profession, because you generally fight animal Mobs, which most will rush you and fight in melee range. Melee Mitigation and Toughness seem to be the biggest assist to the Padi grind. Novice Brawler seems to be one of the most popular skills around, for beserk and intimidate for new jedi's.
That is not to say you need a melee profession, I have a few friends that did not have melee professions and they made it through the grind just took them a little longer.

1. you DO NOT have to train any skill you unlock from a quest. However, once a quest is started you cannot start another one in that phase until that phase comes around again. So you might as well just finish the quest.
2. Being a rifleman has no effect on your jedi. you can be a Padi and still have master rifles. Your damage does not increase or decrease since your offense and defense stats are based on the weapon in your hand.

Assume that I haven't stumbled across it in that sense but got the datapad from a Sith and went there deliberately but then bimbled around the village and took a random quest to see what it was like, only then thinking that reading the forums might be a wise idea.
Assume also that I can handle myself with a rifle against animal mobs. Does that change any of the answer?

I think you are locked out of doing any other quests whilst you are currently doing that one, at least thats the impression I got from whips phase 2 quest (he says somethig along the lines of 'if you want to help me, you'll be in for the long haul so be sure youre ready as you wont be able to help anyone else') - If theres a specific limit or not, it should be in the FAQ.
If you do a quest and dont want it in the future, theres nothing stopping you doing the quest you want again next time the specific phase shifts around again, it just means that it may be a few month until you can finish your template of choice if you cant get a good sequence on your skills.
As for the rifleman thing, theres no real worry - having FS melee accuracy and melee speed helps a lot i'd have guessed (thats why they are reccomended skills to get) as far as I know, the melee defence from rifleman carries over no matter whatweapon you wield. There would be no benefit to being a swordsman for instance, as the swordsman accuracy and other bonuses (for example, melee mitigation) wouldnt apply to your lightsaber based attacks anyway, so you would be no better off than a rifleman in that regards.
However... getting novice brawler is highly reccomended as it allows you access to the bezerk skill, which everyone seems to talk about using when they do the novice LS grind, as it applies to all melee weapons, and improves your damage (at the expense of special moves, but you cant do any special moves before novice LS as far as I know)

1. you cant cancel the quest, but what u can do is just dont complete it until the phase changes, plus you cant take any other quest, only 1 quest per phase. if u dont want the fs skill just drop it or dont train it. like myself, i did the persuasion quest on phase 1 ( because no other quest was beneficial for me) but then decided not train it coz i thought persuasion wouldnt be much of a benefit plus being a doc, i would have to cap like 160 times med xp and same amount of trip to the village. depends on what your template is its not really a catastrophe, coz u can train more than6 trees, but the problem would be in a sense that if u want another quest that was on the same phase, u would have to wait for like 9 weeks.
2.well at jedi padawan without anynovice lightsaber or whatever ur gonna suck anyway, but general opinion is that it helps at early levels (in case ur being hunted), but i mean rifleman is only good at master level ( i have been a rifleman before) just make sure u dont drop it before u get a tier 4 in lighsaber filled in.
