When you get to the village and you take a quest by mistake is there anyway to drop it and take a different one or are you stuck tell the next phase?

No, there is no way to cancel a quest. Yes, it is stupid.

No, If you start a quest you have to complete it or wait until next time that phase comes again to start the other quest you want.
