If you had a single handed lightsaber, could you work on fencer and up your stats with a single handed weapon? Or make yourself weild it faster etc. And same thing with a two handed lightsaber...with working on a two handed brawler, and polearm for doublebladed??

Good thinking, but no. Lightsaber skills have their own mods--One Handed Lightsaber, Two-Handed Lightsaber, and Double-Bladed Lightsaber respectively--and aren't affected by anything except generic melee speed and melee accuracy mods you get in the FS line.
In other words, no template stacking with Jedi.
