You will craft the lightsaber yourself and it is after you do at least 6 village quests and get 6 full trees in FS skills, filled with xp. Then you do the exit quest, killing Mellichae, and start the padawan trials. Halfway through the padawan trials you get to craft your first training lightsaber. You still can't use it though till you finish the padawan trials and become a padawan.
You can keep your normal carrers all through the village and the padawan trials. Once done with the padawan trails you can choose to train in jedi skills, but you only have 250 skill points so as you train jedi skills you will need to drop your normal profession skills. Once you have 220 skill points in jedi skills (not including FS skills) you qualify to start the jedi knight trials.
Took me 8 months to go from first day I was playing to jedi padawan with no jedi skills, just the padawan box. This was all before the combat upgrade though. Just basing time on village phases and such the minimum amount of time to go from new player to jedi padawan with no actual jedi skills is about 4 months.

You can unlock a new branch every 3 weeks, you need 6.
3 x 6 = 18 weeks
you can have jedi in 18 weeks 3 days and 1 hour.

But does that include getting all the badges you need to get glowie? I guess if you had others help you with all the themeparks and the warren or corvette they would go much faster and you wouldn't need to grind two elite combat professions but even in my very large guild we don't do this, speed people to jedi that is. All the themeparks and the warren take some time to do, especially if you do the rebel themepark instead of the imp themepark as it's horribly long. Plus you would already need to know how to use the game fairly well and exactly what you need to do to get glowie, etc. which most newbies don't. Not to mention have all the credits you need for equipment, etc. to do all that combat and grinding. Plus that 3 weeks per phase is server time, in real time it's a bit longer and over the course of 6 phases adds up. Given how many times they are going to take down the server for updates, patches, etc. this will add even more time.
I still say you are looking at 4 months minimum for a new to the game player, and even then you have to burn a good portion of midnight oil and really study and learn how to play the game, etc.
