I know I need 6 sets of FS boxes. My questions is; If I get 6 sets of boxes to become a Jedi, then pick up a 7 set, can I drop one of the original 6 sets so that I can change my FS skills around after I unlock? Or am I forever stuck with the original 6 I unlocked in the first place?

I'm pretty sure that you can drop one after you pick up another. You have to keep a minimum of six. I've seen Jedi at the village and they were doing just that. Picking up one tree and then dropping another.

not done it myself, but know it has been done. just be sure that you have trained the whole 7th branch before you start dropping one of the other. Oh, and jedi xp can not be converted in the village
