So here I am grinding away my fss branches and planning my Jedi when I dawns on me that it takes 250 sps to train Initiate. So, in doing so does that mean I unlearn my force branches? Or are we able to keep them while leveling up padawan?

That's the old system.

Check out Padawan.org

You can keep your current skills.

It doesn't cost any points to train Iniate and Padawan. Novice lightsaber skill costs 8 pts.

You have to drop your regular skills as you advance.
