Hey guys, been a while since i posted in here.
However, i have some information for you.
The old man will visit you, sometimes it takes a day, sometimes a week. Here's why:
Depending on your server and how many people are in the village, as new people join and others finish, depends on the wait you have.
If you're waiting for the old man to begin the village grind, you have to wait for someone to Exit the village basically. As they leave, you get your visit.
The ones waiting to leave, well, your wait depends on how many others are waiting. If there's no one else waiting, you'll find you get a visit quickly. If there's a lot then it may take a little while, as i don' believe the old man will visit more than one person at once.
This is just a theory, but i think it's pretty close to the mark.
