Chances are you can delete the WP and get a new one I've heard, but you need to confirm. As to why they are so strong, your combat level. There is a damage multiplies. The damage from all attacks is mutliplied when you are lower level, so if they are 10 or more above you, they can probably kill in a single shot.

Villiage can be tought, Dathomir is very deadly, don't try the villiage with a low combat level.

Now if you are CL80 by some chance, then I don't know. But if you aren't you can always group with a CL80, that will remove the damage multiplier.

It appears that the Sith, which used to be relatively easy to kill, are more in line with what to expect when you get to the village. If you are unable to kill them at your level, grind some experience and raise your level to something that will allow you to kill them.

yes, delete the wp you must. If you delete the wp you should get another chance soon after at the sith. try to get in an area where there are no factional npcs around to help or elseyou will be in the same boat. Also since you are only at lvl 61 I would recommend the same as the others and either grind out a bit to raise your lvl or if you want to get this part done see if you can grab a couple friends to help, make sure they do not loot the sith or again you will have to wait for another chance. I would strongly recommend you getting at least to level 75 before attempting any quests in the village, unless you have friends there that can help you out. I was around 66 for phase 4 andI got pwned alotgoing solo.As has been said the sith now are right in line of where they should be and the ones in the village are all around lvl 77, not to mention Dathomir sucks.
