well done mate. glad to see you're finally through it after the weeks of questions and advice you've both given and received hehe.
And the final answer to your question is a simple one: Yes, just wait around outside of an NPC city. The old man will visit you in player cities without question, so it's safer to hang out in one than to sit in the wilderness.
The visit can be anything from a few hours to a few days, I believe one person here had to wait about a week before he appeared. My total wait was about 8 hours.
All i did was log in, shuttle from my current spot to another player city and as i loaded in, the old man came running up to me
Good luck with the future trials. If i was on your server, i'd offer my help to help you kill Mell.
And just remember, with the trials for Padawan, don't approach them on your speeder bike. Get off and travel on foot the last 150-200m or so. This prevents them from despawning or not appearing at all.
Oh and all the Rori ones are often bugged even worse, so if you get a Rori trial, just meditate at the shrine again and "restart current trial" (far right button in the message window that pops up when meditating)

About a week or so ago, I saw the old man come to someone at Dant Imperial outpost (don't know if that counts as an npc city or not?). It looked like the 2nd visit, cause he said something about having urgent news to the person he came for. Unfortunately, they were a rebel in the middle of killing storm troopers, so it appeared the old man left before the person could get out of combat to talk to him. I'm assuming if something like this happens, the old man will come back atsome point? Not that I plan to be doing anything more than socializing when the time comes, but would be good to know.
I have another question on this subject, though. I'm almost at the point where I'll be waiting for my visit. Just need to unlock vehicle control and train the boxes (already have the xp for them). When the old man comes, and I have the waypoint to Mellichae, is Mell already spawned? Or does it update like a mission waypoint would? Reason I ask is so I know if I should just not log on until I have a group of guildies ready to fight, or if I'd have time to organize an attack party after the old man's visit.

On additional note. Mel will spawn within 2km from where you are visited so choose your planet and spot. You don't want Mel's camp to spawn its crystals inside player housing so go somewhere remote. I chose Dantooine because I figured it would be easy to raise a hunting party at the MO and the wild spawns weren't too crazy.
Mel's camp spawns just like any other mission. When you approach he spawns. If you die, the mission gets reset. Others may clone and return but you cannot and you need to be alive when Mel dies. If you die and fail, the waypoint stays sthe same and he will respawnwhen you approach.
