OK, so I'm Force Sensitive and have decided to go for it and grind my toon, however I'm a little overwhelmed with some confused points.

I understand the Grind and learning (transfering XP) but I'm not sure what the four areas mean and which I should grind. Also on that note- how many are unlockable- all or a limited number?

Also, is there a delay of 4 weeks between the unlocking of each phase?

You can unlock all if you want. however as you wrote there is 3-4 weeks between every unlock because you can only unlock one per phase
You only need 6 FULL branshes to unlock your Jedi

What to grind? Depends on what you are. If you are combat then go for something in Combat prowess and enhanged reflexes, if you are something else then go for the others. Its all about what skill you use to get XP. you can only exchange it for pre-decided Xp

Do you have to spend Skill points when unlocking branches? ie, is it possible to master them all?

no skill points used to unlock, but you will need to spend 24 skill points to train the branches after you have them unlocked to be eligible to start the trials

Are the Knight's Trails turned back on yet or will we have to wait to become a Jedi Knight? I am not close to that level yet but I really want to know for when I am.....

I don't think the Knight Trials have been turned back on yet (haven't seen anything in the patch notes lately), but you might want to post the question in the Jedi forum, or do a search there (if the search option works right now)
