What I am wondering is if you only have to unlock the level 1 boxes for each branch, or do you have to unlock every box individually. Which is it?

you do not have to unlock every block, just the lvl 1 blocks to open the branch.

which skills are unlocked during what phases and at what point do i get a lightsaber?

Do have to do a village quest for each FSblock making it a total of 24 village tasks to move on to the Padawan trials.

No you unlock a branch per village phase.
One branch = 4 boxes so only 6 village quests

You have to do a village quest for each tree you wish to train in. Each tree has 4 blocks, so the minimum number of quests you will need to do is 6. 6x4=24 which will get you the required boxes

Oh thank god I thought that had 21 more trips to do village quests.

You'll be visiting the village a lot more than 21 more times. You'll have to go back and trade in weapons and combat xp to convert it to force sensitive xp. Lots and lots of trips to the village in your future unless you were a hologrinder and have some free unlocks.
