There is a link in the Jedi forums where they explain all the creatures that drop crystals and also an estimate on the quality dropped.
But this is old since it was released with pub 9, so do a search

Is there such thing as a pink Lightsaber Crystal? If there is and you have one and you are on Sunrunner, contact Belossk ingame either by tell or mail with an offer and we can haggle... (If you are willing to sell it of course)And could you kindly give me a list of all the Lightsaber Crystal colors? Thank you.

Light purple looks very similar to pink. That's as close as you're going to get at the moment.

I see um for as high as 1.5 mil, but generally i sell them between 6k to 12k depending on condition.
