No. Your main character (the one you do all the FS grinding/Village quests for) will be your Jedi. The extra slot you open, is non-FS and you just pick whatever professions you want.

right i have no intention of doing this (once was enough) but.. could you do the quests to make the alt jedi? or is it the main only?

Yes, but you do not get another character slot.
