You are correct. At Master LS the speed gets capped, so the FS speed is of no use. Good for leveling, but little else. Accuracy is the most beneficial offensive FS skill (notiice that it is also one of the hardest quests)

I think you have misinterpeted what is out there. For jedi there really are only 4 really good skill and 2 marginal skills so if your smart, the 4 mains ones are a "must" but not required.
The four are: Range and Melee Defense; Melee Speed and Accuracy

no, its been confirmed that jedi have no ranged attack, all powers are their own thing and saber throw is not ranged either.
It has also been confirmed several times over from pre patch 9 beta testing that melee speed and accuracy have no effect on lightsabers which are not treated as melee weapons. If you don't believe me, when you start swinging a saber at novice LS, do the math with and without the melee speed mod, you will find that you are NOT hitting as quickly as you should be in the calculation with the melee speed mod and that you are hitting the exact speed if you calculate without the speed mod.
Accuracy is a hard thing to measure, so I don't bother, I eat citrus snow cake, 40% accuracy mod and at LS 0030 you will find you rarely miss and if you still eat it at LS 0040 you will find you never miss.
The only way they are treated as melee is that melee defence helps against attacks from a lightsaber. If you don't believe me, read the jedi boards. The bottom line is that jedi only care about getting melee and ranged defence trees. Jedi with luck have had the same luck tuning crystals and the crafting columns are good for lightsabers, but the way experimenting works out its overkill, you'll craft just as good of a saber without any force crafting.
So just pick columns that you want the loot from or are easiest to grind for you. Take this advice to heart, had I known this when I did the village, I would not have taken:
Ranged Accuracy
Melee Accuracy
Melee Speed
Healing
Instead I would have invested in a crafting column, Luck, Vehicle control and some other skill. Just like when players learned how to stack templates a year ago, its just starting to come out how to stack jedi templates and the truth about the FS columns is finally being analyzed to the point where it has been realized that almost none of the FS columns even matter to a jedi.
If CU changes the lightsaber and makes it a melee weapon that can use the speed and accuracy mods and if the powers and saber throw attacks get treated like ranged, then great. But the Dev team has made it clear that jedi is already combat balanced and will not see any direct changes in the upgrade. Instead we will see that we will become balanced where right now we are weaker than intended.

Thanks in advance, and sorry if this question has been answered elsewhere.You can do any combination you wish, as long as you fill 6 branches. I'd suggest to figure out ahead of time which ones you want and plan ahead according to the village phases.
Since none of the trees really help Jedi in any way, shape or form, it's easier to just get the first 6 you can and fill those out. Unless you're interested in the little prizes that some give out, in which case, yes, plan ahead.
