I noticed with the 2 hand sword, it appears to do more damage but the special randomly attacks multiple ham bars and only the mind hit can target the specific bar. Does the swordsman have specific damaging special moves that allow concentrated attack on one particular ham bar

Well the one-handed swordsman or fencer has attacks that can target the health bar along with a random HAMtargetinghit also.

So far I've gotten 1 Hand Body Hit 2 and 1 Hand Health Hit 1 (which induces bleeding). Both target the Health bar.
