Im a TKM and I wanna also go fencer, but do the Fencer defenses work when Im using a VK, or do i need to use a fencer weapon?

The def Vs XX works with any proffesion, the melee/ranged defence works with any proffesion, the only one that is class specific is Dodge, which only works with fencer and pistoleer

what about unarmed toughness and so forth?

Unarmed toughness comes from the TKM line. You have to be "unarmed" to benefit from it.
