Right now I'm a master swordsman, master CH, & novice medic. I only do PVE. So I'm wondering if Igo up the stances and grips tree (i only have enough points for 1 full tree), would the melee defense skill mods help out my swordsman? Or should I just put those extra points into something else?

Yes the melee def will help your swordsman, the only things that wont work cross class like that are the 1 handed things, as well as dodge and such.
