if i take fencer's footwork and techniques tree will i have the knockdown and dodge defense when using a 2 handed weapon?

You will have the defense v. knockdown since that is a state defense. The dodge defense will only work if you are holding a 1H weapon or a pistol as they both use dodge. Once you equip a 2H weapon your defense is counterattack (i think its counterattack, i know its not dodge or block)

Swordsmen have counterattack along with carbineers, riflemen and pikemen use block, so you're right.
