When you are doing the theatre manager quest, do you have to do it twice to get the musician and the dancer schematic?

Yes, after you quest for and receive one, you may return to the Theater Manager and start questing for the other.

The "schematic" is a scroll that teaches the person who obtained it a new song or dance.

Not only that, once you get the Dancer "Schem" and learn Theatrical, you can visit the Choreographer and get Theatrical 2. She'll require you to get (I think) 100k of Theatrical Dance xp. Not any dance xp, but theatrical only. Once you have enough of that xp, you'll want to make sure you do not have a buff active, as sometimes it's a big buggy.
