You probably just didn't do enough of the dance or two that they did want to see, and that's not your fault.
What the audience members tell you comes from a random roll off a table of possible responses. Just because no audience member told youabout a preferred dance or two doesn't mean there weren't ones... it just means you didn't happen to get any NPC's to tell you what those were. That makes the quests very difficult to do.
The general consensus from people who've studied the quests' mechanics is that special effects (smokebombs and the like) have no realeffect on satisfaction ratings.
We do have some feedback about how the performace is going while we do it (through the rating updates), but I think they come too slowly to really be a useful guide for how we're affecting the satisfaction rating. Hmm... gives me a new idea for something that could turn NPC theater performances into something more fun for performers... I'll have to write up that proposal soon. 
Really though... it's probably not anything that you did wrong, just that you didn't get lucky on the response rolls to provide enough solid info on what they wanted, and didn't happen to stumble on to the right combinations long enough to get them up to Satisfied. It's happening to a lot of people, you're not alone.

Your don't have to wait until you finished the animation with one flourish, the system will register up to five flourishes within one "tick." Doing more than one flourish at a time will greatly improve your score as the system just seems to count the number of flourishes, somehow weighted according to flourish/dance preference.
