What does this do ??
I bought one thinking it would harvest much more quantity of a certain resource from a creature?
but what does it really do ?

Thats what it does, it adds a bonus to your harvesting capability, 108 is a good one so keep it.
when you use the droid, don't group it or it will run a lot.

So does your character's actualharvesting skill affect how much is harvested by the droid? Or will it harvest the same amount whether you're a Novice Scout, or a Master Ranger?
Also, if your skill does not in fact matter, what does the droids harvesting numbers compare with? Let's say you were a Master Ranger, would it be best to harvest the animal yourself?

Your skill matters. The higher your skill, the more the droid will harvest. The droid's ability is also bolstered when you eat Vegash.
