I haven't tried the trapping module yet. But Creature Harvesting and stimpack dispenser modules do stack. There are other threads about the CH module, it isn't very straightforward that more modules will actually improve the harvest quantities.

harvesting: Yes, these benefit from stacking. I'm currently maxing out my harvest droids at +106, but I know higher is possible

stimpack dispencer: This is a bit odd, they DO benefit from stacking, but only in terms of how many Stim-A's they carry. Most people don't want that anyway. Consider Experimenting on it for durability to allow more stims to be stored.

trapping: Very much like the Stim Dispenser, as more modules only allow you to store more traps. I haven't tested this yet, but I don't believe it will allow more than one trap to be launched at a time. Will follow up on that shortly.

Hope this helps

Trying to figure out which modules benefit from stacking. For example, I know that one "item storage" mod will get you max, but stacking the combat or harvesting mods will increase the final number. Any help would be appreciated.

Mainly, I am concerned with harvesting, stimpack dispencer, and trapping. I wasn't sure if I should make a droid that copuld do it all, or make specialist droids, all loaded with one mod type.
