i'm considering buying a droid but everytime i go to a droid shop the vendors are empty. i did go into one shop last night that had deeds for probe droids. is this the same as buying a droid or do a have to buy the deed and then find someone with a droid type matching that deed to purchase too? or can i bypass the deed and just buy a droid from someone?
any help with this would be much appreciated, preferably the steps to take and what i need to purchase a droid and be able to use it.

deeds are the droids.. you select tame from the deed icon when you have it it appears..
don't look under entities->droids on vendors.. you need to look at items->misc or misc->items i forget which.
its messed up...

For most vendors I just tend to look at 'All' rather than sections. Very few vendors have more than 200 items, especially if they are selling expensive, time consuming items like droids.
Also, I think a lot of DE's don't put many droids on their vendors because they tend to make their droids to order. I only maintain a few 'standard packages' myself (Surgical Droid with Medical Module and Food/Chem, Advanced Probot with heavy armor, etc.). Standard package droids tend to be close to what a customer wants but not exactly right (Oh, I wanted a Prissy personality instead of Geeky). Also, I prefer it since anytime I sell a droid I have the people tame it immediately and run through the modules to test them out. I've had more than a few occasions where a bug has prevented something from working (surgical droid not being able to use storage, a droid where the Food/Chem didn't function possibly because of a GMSC bug) and I've taken the droid back to make a new one or else found out it was because of an unfixable bug and either offered an alternative or else adjusted the pricing.
So why do DEs have vendors at all? In case someone needs to buy a droid in a hurry and is willing to accept a standard package for one. Also because it lets me advertise a little more when I'm not around. My vendor encourages people to email me to set up an appointment for custom droids.

I'd suggest finding a DE to custom make you a droid, that way you can get the modules most useful to your profession.
just beware, your large amount of credits could be vaporized quickly as probots/droids die permadeath on incap...
