I noticed that there is only one color to choose from now when building the Surgical Droid chassis. Granted, colors don't really work on droids, but I find it annoying that the Devs remove/change aspects about the game without letting us know. There used to be 2 color options. The first for the main overall color, and the second for the trim.

I bring this up not because of the actual change, but because there could be other un-announced changes that we are not aware of. Keep an eye out.

They took it out because it doesnt work. Probably going to re-vamp the entire customization system for droids.

They take 1 out because it doesn't work, but leave the other one in? That does not make sense...

In the face of hundreds of other problems, does this triviality even need to be reported?

Yes it does need to be reported. A bug is a bug no matter how trivial.
