i haven't tried making a droid since the CU. to be honest, my heart isn't in it so much anymore. but i'm gonna give it a shot.

so on to the question...

have any of you adjusted your pricing models since the CU? if so, how and why?

Healers heal.

Raised the price on my BH droids, but that is about it.

Actually I take that back.

I priced my "Pre-Cu" Combat droids with maxed old HAM for 1 million Credits each. In the description, I was clear that the only difference was HAM, and possibly the HAM may or may not ever go back to that value.

The 1 million figure was an experiment, didn't really expect to sell any. Guess what, I sold 5 today. Which just proves my point that people have more money then they know what to do with. Charging low doesn't make sense.
