there is an even simpler answer that makes it so you won't gave to remember any waypoints:

there is a droid engineer trainer in the back right corner of every university. and universities are listed on the world map (ctrl-v) under guild halls. nearly every major NPC city on every planet has a university. once you know this little fact, it's very easy to find a DE trainer no matter where you are.

there are other DE trainers scattered around in random places, but there's no need to look for them. just go to the nearest university whenever you need a DE trainer.
