It depends on what the purpose of the droid is. If it is only for space, might as well equip an R5 with the needed data module. But, if the consumer (or you) needs it for something else, you can build it to their (or your) needs. Give it a Level 6 Armor rating, data moules, and whatever else the consumer wants. Maybe throw in a Droid Storage module or auto-repair. If you are gonna use it for combat as well, put a combat module in there. There isn't one set combonation for a droid. Like I said, it depends on the use of the droid. If it's a doctor/pilot, give it both a data module and a medical module. Crafter/pilot, build it with a crafting station and that data module. It depends on the needs of the droid. I'm going to say it again, depends on the need of the droid. Now, if I'm wrong, someone please correct me.

Is useful stack data modules lvl 6? or only with one module is enough?

One data module gives it the corresponding certification. Level 1 makes it a level 1 astromech, level 2 makes it a level 2 astromech, etc. As far as I know, stacking does nothing but waste room.
