Simply picking up a dabbler template to crank out a 'random droid once in a while' depends on what you want. There is no defined dabbler template as there are in combat professions.
You will need to be a Master Artisan to keep up with the Seeker and Probe Droid demand, since between the two droids you will need 2 Electronic Memory Modules and 5 Electronic GP Modules.

I'd suggest looking at the trees and playing around with them. DE is not a profession that many dabble in since, it not only takes some patience and time to learn the ends and outs of, such as the combat damage forumals, how stacking works, and whats broken and whats not.
The way that DE is currently designed makes being a non-Master DE something of a difficult task, even for ones own usage. Unless you do your reading first, in such places as the DE 101 guide and the various bug threads, on this forum, I would highly suggest looking at another hobby as a dabbler.
If, after you've done the reading, you still wish to pick up DE, I would suggest 4314. This will give you the greatest freedom of building options, but it will limit your experimentation abilities. Keep in mind that you will also need Master Artisan, or someone that is willling to make Master Artisan parts, to craft majority of the more useful droid chassis and components.
