I am not a DE but as a consumer of their products I find them lacking. I am a smuggler/pistoleer and have owned a probot (destroyed perma death post nerf) and now I currently own a R2 unit, and a seeker thing I bought cheap that just uses up a space in my datapad. I don't know a lot about their problems other than droids are disposalble with a expensive price tag.
My R2 unit has medical capabilties, storage, and food/chem crafting. While thats pretty neat I would rather have a droid that can survey and I just follow or one that can sample resources. I have basic artisan and gather resources for my spices and sell on the bazzar, it doesn't need to be able to continually sample, i just need one to see if its worth mining rather than draining my action or mind bars, it usually takes me several attempts to get a sample leaving me with a 4 minute down time.
Theres all kinds of uses you could give them just to make them a little helpful to classes that aren't maxed artisan or scouting that would not step on any other classes toes, just a little boost to endure them to their owner, rather than something that just follows me around beeping.
Medics use them and yes they have some useful abilities but it seems to me they could really expand and look at it from the prospect of a consumer rather than "oh that would be cool thing even if only one class can use it" designing. Droids are should be able to expand my abilites and not just be a portable crafting station.
