I'm trying to find out how do i get a stackable text sign i.e
Shop open
Selling this
Come in and buy.
Rather than the
Shop open selling this Come in and buy.
That I currently have, can anybody help me please /beg

Yeah, that's basically right, just open notepad, write what the sign should say in the layout you're wanting it, copying it from notepad into the house naming option.
example.

Ok I have heard that many times, how do you copy and paste in the game though?

In the options controls Menu click keymap, click on the chat tab and map a key there, I over rode the games normal ctr-c ctr-v personally

Many people,including me,use a ctrl-shift-c and ctrl-shift-vcombo instead of overriding normal game controls. Also, this caused me some confusion for a couple of minutes, the chat commands are "chat edit copy" and "chat edit paste" not just "chat copy" or "chat paste."

One thing to remember is your sign can only take 128 characters. Spaces, line breaks, and hex code all count as characters.
