What does everyone do for mass amounts of grinding resources? Would it be cheaper and easier to buy harvesters or to buy resources from vendors?

Definitely harvest it yourself. With about 4 nice heavy mmi's and a couple of chem deep crusts, you can get your stuff rather fast. Plus, you can lower your costs on your droids by a factor of 10 at the very least. The harvs pay for themselves within a couple of weeks, seriously.

I used the harvesters my guild had on hand to get grinding steel and fiberplast.

Does anyone have info yet onhow the attributes of a resource affect ship building, hulls and parts.

Not offhand, but if you read the schematic, it will tell you. Its probably in one of the FAQs/Guides posted at the top.
