I can only go up 1 skill tree in droid engineer and was thinking about going up droid production? Is there a better choice?
And what happens if your droid dies?

As a novice you can only make mse droids and I would not sugest going up just one part of DE in droid production you can only make mosules to use in droids not the droids themselves. Yay I finally got to help someone lol.

Nothing against dabbling, but DE is not a profession that's easy to pull off as a master - nevermind trying to do it with one tree.
The trees interconnect, if you do one and not the others you might be able to make chassis, but no modules or deeds, but no subcomponents. In the end, it's really designed to go up the trees equally or you wont be able to make the complete droids (even if you get the deed schematics)
Nevermind not being able to be an efficient DE without having master artisan as well...sheesh!
As a novice DE you can make MSE droids and droid storage compartments, which is a required item for most types of customization kits and some architect items. Don't expect to make a decent return on them though.

Do the quality of the Artisan components, i.e. Memory Modules make any difference in the final build of the droids or the sub-components? I have not seen much if any difference, in the quality, but really this is a part-time profession for fun....yes I did say for fun!
