Those cool droids are Bomarr Monks, who have given up on the world of sensation to pursue an existence of contemplation. Do the Scythe Blade Quest and you get to talk to their leader, he liked me, said he had his eye on me. I always kinda wanted to be a brain in a tank....

Yeah. Knew the story behind them, just couldn't grab their name off the top of my head. It's been a long night. 
I still say that it would be great to take the brain of a womp rat or something and shove it in a chassis.
Didn't know about the Scythe Blade Quest though. I may have to give that a try... perhaps see if their brains are really more than just SPAM.

Droid heads & limbs/exterior parts would be cool - personally though I'd like to be able to loot (or otherwise aquire) the trashed droids you see near the DE trainers and scattered around towns (especially on Tatooine) would make my workshop look alot more 'gritty'
If you were looking for some specific examples....
Astrogation Buffer
Droid Caller (and obviously restraining bolts)
Verbobrain (cant remember the exact model number off the top of my head)
Thinking about it - incomplete, yet animated droids would also be cool - like the torso and head guy you see on the Sandcrawler - that would look very cool thrashing around in my workshop

A schematic for Pit Droids, can hold 1 Module or Requires 1 Repair Module.
More Personalities chips, or one that actually translates.

I've always wanted chassis parts.
An astromech body with no head, or an R2 head.
Just so we can make our shops look as if we're actually putting droids together (have a work table with the head on it, or fashion some sort of system to have the head being lowered on to the body, etc.
