Combat modules and defensife modules are installed at the time of droid construction. If you want to add them to a current droid, you can't. You'll have to purchase a new droid from your local DE.

No. My DE can currently call my level 19 Probot without a problem.
Be careful, though. Even a droid with no combat skills has a level, (my R3 crafting droid is level 19, too), so if it's grouiped with you it can either increase or decrease your effective level. As a benchmark, my level 10 pets were white to me with pistols 4, but my droids were deep red. If you are low level and have been given a high level but non-combat droid (such as a crafting droid), you can get in way opver your head if getting missions while grouped.

On my R3 unit. i tried to change its name from "an R3 unit" to "R3-T5" i did the complete program list with its name, then command. but its name is still an R3 unit. Is this a Bug that i should report, or will he be stuck with the generic name?
Second Question. Do you think you could do a post on how to program the new harvesting droids? i cant figure this one out.

First Question:
Unfortunately, you can't use that naming scheme for droids.
Second Question:
TO\o program the harvest droid, you have to have Hunting skills as a scout (I believe you only need novice scout, but i could be mistaken and will update this next time I play). You then choose the harvesting preference from the radial menu (bone, hide or meat). After that, you program the harvest command. Target a corpse and issue the approriate command to the droid to have it harvest the set material. If the material doesn't exist (say, bones on a corellian butterfly), the droid won't harvest anything.
Now, for maximum effectiveness, use a droid with nothing but harvesting modules (you do not need item storage modules on the droid. It "delivers" the harvested materials to your inventory). THe higher the number, the better it harvests.
Probots are good ranged attackers. they provde good support to melee type classes. The advr3 on the other hand is more of a brawler type attacker. He can get up and in the faces, even take hits if you have the means to repair it... that style of course will work better if your a ranged class. I really think ppl should buy droids that compliment their fighting styles, and as such, different droids are better in different situations. As far as i know the advr3 with ham of 4400+, willhave higher attackspeed, and damage than an advprobot with only 5 combat modules (r3 get's 6), and a ham of 3100+.

Is this true for all modules, like storage modules? Can droids ever be modified at all after purchase?
(and if not, why do DEs sell plain vanilla MSE droids? Makes no sense)
