I've had 2 similar issues with not being able to harvest resources.

1. Some creatures don't have any to harvest, even when you examine them they don't show any.

2. When harvesting around an invisible server boundary, the droids can't harvest and you are not able to either, which is probably the one that's affecting you. Try moving to a completely different town, area or planet and see if you can harvest again. Some towns have server boundaries that are about the same distance from town as where the missions tend to spawn.

I tend not to use my droid anymore, since I am usually grouped and I can harvest twice as much with out the droid. An example is I gather 600 units of hide if I harvest the corpse, but using my 109 harvest bonus droid, It will only harvest 300 units off the corpse.
