I am currently just a novice doc (0002)

If I made some schematics would I still be able to use them in a food factory if I gave up doc?

yes, the schematics YOU make will still work until you use them up (each schematic can make a max of 1000 items). The draft schematics will disapear once you drop Doc, meaning you wont be able to make any new schematics.

remember though, that a schematic can only be used in a factory with the EXACT same components/resources used to make the schematic
