I myself started out as a Novice Medic, after growing awfully tired of Weapsmith, back sometime October-November. Had quite a climb up to Novice Doctor, and even more trouble to get to Master Doc, but I finally aquired the title in early February. Realised this is what I want to do, and have started taking my first steps to start a Crafting Operation.

Novice July 3rd and Master on July 22nd

Started end of September, was master by November (this was before people used the word "grind" with "master").

I've been Medic/Doctor since mid-July, but I hit Master Doctor sometime in November.

Since Beta. 
Which gave me a bit of a head start for knowing how to get it efficiently going live. I wasn't the first Doc on Eclipse, but I was also doing it on Talus, not one of the heavily populated planets like Iw-Ip (whom I believe was the first on Eclipse) did.All of that only means that I jsut have no idea just when it was. Within 4 weeks of going live, though, possibly less.

November for me as well. I also did it the slow way (no grinding xp), and had a riot experimenting with all the different variations of medical products.

My first character was a doc on Bloodfin from launch(and still is), started as a medic and worked on up from there...it was a crazy dealing with people coming incompletly black with wounds and no one having any meds at all, having to tend wound starting off and then using crappy wound packs A to deal with that is not fun...there was a lot of yelling and a lot of full med centers...trying to get enough tips to train because there was no other docs around that were high enough to train you. being blown away because I got a buff of 1200 in...those were good times
